canning legend

canned plain beets- no salt. 26 quarts.

dill spears- ball blue book dill pickles. 1/3 less sugar, homemade spice mix, homegrown dill heads and one clove of garlic per jar. cucumbers were soaked in lime, 10 minutes in boiling bath.

batch one a: white vinegar, hot pepper in brine.

batch one b: apple cider vinegar, no hot pepper.
